Ginger Snap Cookies


1 cup shortening
1 cup white or brown sugar
1 teaspoon baking soda
1 1/2 cups molasses
2 tablespoons vinegar
5 cups sifted enriched flower
2 teaspoon ginger
1/2 teaspoon nutmeg
1 Teaspoon cloves
1/2 Teaspoon cinnamon
1/2 Teaspoon salt


1. Cream shortening and add sugar.

2. Dissolve baking soda in molasses and add with vinegar to the shortening and sugar.

3. Mix and sift flour, spices and salt, and add to first mixture.

4. Roll out thin, cut wit cookie cutter and bake on greased baking wheel in moderate oven (350 F) for 10 min.
